Fazer
uma sobremesaa da Nigella Lawson é sempre uma aposta ganha. É impossível falhar
com sobremesas tão indubitavelmente assumidas e doces.
Este
cheesecake faz sucesso pelo que recomendo vivamente que experimentem. Vale
mesmo a pena!
Cheesecake de Manteiga de Amendoim e Chocolate
(Receita de Nigella lawson)
Ingredientes
Para a base:
200 gramas de bolacha Maria
50 gramas de amendoins salgados
100 gramas de chocolate de culinária cortado em pedaços pequenos
50 gramas de manteiga sem sal amolecida
Para o creme:
500
gramas de queijo Philadelphia 3 ovos
3 gemas
200 gramas de açúcar
125 ml de sour cream (natas ácidas)
250 gramas de manteiga de amendoim (cremosa)
Para a
cobertura:
250 ml
sour cream (nataz ácidas)100 gramas de chocolate de leite cortado em pedaços pequenos (eu usei chocolate de culinária)
30 gramas de açúcar amarelo
Quando
a bolacha tiver o aspecto de uma areia bem húmida deite dentro de uma forma de
aro (eu forro sempre o fundo da forma com papel vegetal, pois torna-se mais
fácil de desenformar) e pressione a bolacha uniformemente de modo a fazer a
base. Leve ao frigorífico enquanto prepara o creme.
Num
processador de alimentos ou numa batedeira misture o queijo Philadlephia, os
ovos, as gemas, o açúcar, as natas ácidas e a manteiga de amendoim até obter um
creme suave. Deite este creme na forma e leve ao forno durante cerca de uma
hora. Verifique o cheesecake ao fim de 45 minutos. O topo do cheesecake – e
apenas o topo – devem estar firmes. Tire o cheesecake do forno enquanto prepara
a cobertura.
Num
pequeno tacho, e em lume brando, aqueça as natas ácidas, o chocolate e o açúcar
amarelo, mexendo sempre, até derreter o chocolate e obter um creme homogéneo.
Cuidadosamente deite colheradas deste creme sobre o cheesecake, será de evitar
que o topo do cheesecake rache (se isso suceder a única coisa que acontecerá
será o bolo ficar marmoreado). Coloque o cheesecake novamente no forno durante
mais 10 minutos.
Retire
o cheesecake do forno e deixe arrefecer na forma. Cubra o bolo e leve ao frigorífico
de um dia para o outro (será mais fácil desenformar o bolo frio).

Chocolate
and Peanut Butter Cheesecake
(recipe of Nigella Lawson)
Ingredients
For the base:
200 gram(s) digestive biscuits 50 gram(s) salted peanuts
100 gram(s) dark chocolate chips
50 gram(s) unsalted butter (soft)
For the filling:
500 gram(s) cream cheese 3 medium egg(s)
3 medium egg yolks
200 gram(s) caster sugar
125 ml sour cream
250 gram(s) smooth peanut butter
For the topping:
250 ml sour cream 100 gram(s) milk chocolate chips (I also used dark chocolate)
30 gram(s) soft light brown sugar
Once it comes together in a clump, turn it out into a
springform tin (I always line the bottom of the springform with some parchment
paper) and press into the bottom and up the sides to make the crunchy crust. Put
in the fridge while you make the filling.
Process the filling in the cleaned or wiped-out
processor bowl, putting in the cream cheese, eggs and egg yolks, sugar, sour
cream and peanut butter and whizzing to a smooth mixture. Pour and scrape the
filling into the base in the chilled springform tin and cook for 1 hour, though
check after 45 minutes. The top – only – should feel set and dry. Take the
cheesecake out of the oven while you make the topping.
Warm the sour cream and chocolate with the brown sugar
gently in a small saucepan over a low heat, whisking to blend in the chocolate
as it melts, and then take off the heat. Spoon and spread the topping very
gently over the top of the cheesecake, being as careful as you can in case you
break the surface of the cheesecake. (not that anything bad will happen; you’ll
just have chocolate marbling the cake a bit.) Put it back in the oven for a
final 10 minutes.
Once out of the oven, let the cheesecake cool in its tin and then cover and put into the fridge overnight. When you are ready to eat the cheesecake, take it out of the fridge, and spring from the tin.
