(receita retirada do site "Portugal Gastronómico")

Faz cerca de 40 bolachas pequenas

Ingredientes:
100 gr de manteiga
100 gr de açúcar
1 ovo

These cookies are not necessarily Christmas Cookies, as they don’t have any of the traditional spices such as cinnamon, ginger or nutmeg. In fact they are just simple cookies that earn they reputation because I always bake them in Christmas and in the shape of Christmas Tree.

This recipe can be easily doubled – and it should as the cookies really disappear quickly -  and the dough is very easy to work with. These cookies are also great to decorate. You can also add some different flavors such as 1 tablespoon of cocoa, some orange or lemon zest, 1 teaspoon of a spice mix and my favorite dip them in chocolate!

Christmas Cookies
(recipe from the website “Portugal Gastronómico”)

Makes about 40 small cookies

Ingredients:
100 gr butter
100 gr sugar
1 egg
250gr all purpose flour

Beat the sugar and butter together, add the egg (if doubling the recipe add eggs one at a time) until light and fluffy. Add the flour all at once. Mix until you have a smooth dough.

Roll out the dough until 4 mm thick. Cut the dough with a cookie cutter. Place the cookies in a parchment lined tray. Repeat this process until there is no more dough.

Bake in a pre-heated oven at 200.ºC.º for 10 to 15 minutes.

(serve 2 pessoas)

2 chávenas de massa de cotovelos crua (ou outra massa que tenha disponível);
1 lata de 400 gr de tomate em pedaços com manjericão;
1 chávena de queijo parmesão ralado (eu uso Grana Padano);

Escorra a massa. Junte a massa e envolva no molho. Deixe levantar fervura e junte o queijo. Desligue o lume e sirva imediatamente.

I love to cook and most of the times I’m up for any cooking challenge, but even I have some days that I wished dinner made itself. For those occasions there’s nothing like a nice bowl of pasta eaten on the couch in front of the TV.

Tomato and Cheese Macaroni
(serves 2)

2 cups of raw macaroni (or other pasta available)
1 can of chopped tomatoes with basil (400gr); (or you can add other herb to your preference)
1 cup of freshly grated parmesan cheese;

Cook the pasta according with the package instructions. Drain the pasta. In the same pan, over ag entle heat, pour the tomato can. Add the pasta to the tomato sauce and mix. Bring to a simmer and add the cheese. Take of the heat and serve immediately.

Pré-aqueça o forno a 170.º C.º.

O topo do cheesecake – e apenas o topo – devem estar firmes. Tire o cheesecake do forno enquanto prepara a cobertura.

Nigella Lawson desserts are always a winning bet. You can’t go wrong with that much of indulgency and sweetness.

This cheesecake was a huge success and I strongly advice to give it a try. It’s worth it!

Chocolate and Peanut Butter Cheesecake
(recipe of Nigella Lawson)

Ingredients

For the base:
200 gram(s) digestive biscuits
50 gram(s) salted peanuts
100 gram(s) dark chocolate chips
50 gram(s) unsalted butter (soft)

For the filling:
500 gram(s) cream cheese
3 medium egg(s)
3 medium egg yolks
200 gram(s) caster sugar
125 ml sour cream
250 gram(s) smooth peanut butter

For the topping:
250 ml sour cream
100 gram(s) milk chocolate chips (I also used dark chocolate)
30 gram(s) soft light brown sugar

Preheat the oven to 170°C/gas mark 3. Then process the biscuits, peanuts, dark chocolate chips and butter for the base in a food processor.

Once it comes together in a clump, turn it out into a springform tin (I always line the bottom of the springform with some parchment paper) and press into the bottom and up the sides to make the crunchy crust. Put in the fridge while you make the filling.

Process the filling in the cleaned or wiped-out processor bowl, putting in the cream cheese, eggs and egg yolks, sugar, sour cream and peanut butter and whizzing to a smooth mixture. Pour and scrape the filling into the base in the chilled springform tin and cook for 1 hour, though check after 45 minutes. The top – only – should feel set and dry. Take the cheesecake out of the oven while you make the topping.

Warm the sour cream and chocolate with the brown sugar gently in a small saucepan over a low heat, whisking to blend in the chocolate as it melts, and then take off the heat. Spoon and spread the topping very gently over the top of the cheesecake, being as careful as you can in case you break the surface of the cheesecake. (not that anything bad will happen; you’ll just have chocolate marbling the cake a bit.) Put it back in the oven for a final 10 minutes.

Once out of the oven, let the cheesecake cool in its tin and then cover and put into the fridge overnight. When you are ready to eat the cheesecake, take it out of the fridge, and spring from the tin.

Adicione as azeitonas e reserve.

Numa tigela misture a Ricotta, as gemas e os espinafres. Tempere com sal e pimenta.

Pré-aqueça o forno a 180.º C.º.

Today’s recipe is a lighter Lasagna, but that still has all the flavor!

Eggplant Lasagna

2 small eggplants cut into long lengthwise slices (about 3 mm thick)
1 chopped onion
250gr of tofu (hand broken not chopped)
1 small can (approx. 400gr) of chopped tomatoes
300 gr sliced mushrooms
10 green olives pitted
250 gr of ricotta cheese
2 egg yolks
400 gr of frozen spinach thawed
100 gr of grated cheese (it can either mozzarella, parmesan or gruyère)
Salt and pepper

In a skillet heat 2 tablespoons of olive oil, add the onion and sauté until tender. Add in the tofu, the tomatoes and the mushrooms. Season to taste with salt and pepper. Bring up to a simmer until the mushrooms are cooked. Add the green olives and reserve.

In a bowl mix the ricotta cheese, the egg yolks and the spinach. Season to taste with salt and pepper.

Pre-heat the oven to 375.º F.
Ladle about 1/2 of the tomato sauce into the bottom of a pyrex (I used a 25 cm square one). Lay down enough eggplant slices to cover the bottom in a single layer. Top with the ricotta mixture and repeat another layer of eggplant. End with the tomato sauce. Sprinkle the grated cheese over the top of the dish and cover with foil.

Bake the lasagna for 30 to 40 minutes with the foil on, then remove it and continue baking for another 15 minutes until the eggplant is tender and the cheese is browned.

(in Baking Handbook by Martha Stewart)

Junte o chocolate.

Numa pequena  tigela junte as natas e o ovo.

Pré-aqueça o forno a 180.º C.º.

Nothing is more five o’clock tea appropriated than a hot cup of English black tea and some freshly baked scones served with some butter and jam. However, some days the old plain scones just aren’t enough. While searching for something different I found these Martha Stewart Scones that had everything I needed… chocolate!

Chocolate Scones
(in Baking Handbook by Martha Stewart)

2 ¼ cups all purpose flour, plus more for dusting
3 tablespoons cocoa powder
½ cup plus 2 tablespoons granulated sugar
1 ½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 1/4 sticks (150 gr butter), cold, cut into small pieces
1 cup (140 gr) of semisweet chocolate chopped into small pieces
1 whole egg, plus a egg yolk
½ cup plus 2 tablespoons heavy cream
Sanding sugar, for sprinkling (optional)

In a large bowl whisk together the flour, cocoa, sugar, baking powder, baking soda, and salt. Add the butter (with you hands or with a food mixer), mix until the mixture resembles coarse crumbs. Fold in the chocolate.

Whisk together the egg and ½ cup plus 1 tablespoon cream. Add egg mixture to the flour mixture, until the dough just comes to together.

Turn the dough onto a lightly floured work surface, and gently pat into a 18-by-3-inch rectangle about 1 inch thick (I made a 10 inches square).

Using a knife cut the dough into 3 inches squares. Place the square (about 2 inches apart) in a lined baking sheet. Cover with plastic wrap and freeze the unbaked scones until the dough is very firm (you can also freeze the scones up to 3 weeks).

Preheat the oven to 375.ºF.º. In small bowl, lightly beat the egg yolks with the remaining tablespoon of heavy cream; brush the top of the scones and sprinkle generously with sanding sugar (I omitted this step).

Bake until the sugar on top of the scones turns golden all over, or a cake tester inserted in the center of a scone comes out clean, 25 to 30 minutes. Transfer to a wire rack to cool. They are best eaten the day they are baked, however in the day atfer if you heat them a few seconds on the microwave they will be as good.

Bought a pineapple that revealed to be unpleasantly acid? Why not transform it into a Piña Colada Smoothie? It takes like 30 seconds to prepare and brings a tropical flair to a cold and rainy day!

Place one natural yogurt, 100 ml of coconut milk and a 1 cup of pineapple (or more if you like) in a blender. Blend until smooth. Taste and sweeten to taste (I used some Agave Syrup). If available a few mint leaves can be added.

Ligue o forno a 180.ºC.º.

(in http://www.momswhothink.com/) - metade da receita será suficiente

Until yesterday I had never attempted to create my own recipe – savory or sweet. Although I always twist, one way or another, the ones I supposedly follow, creating one was a feared challenge. Only until yesterday when I just took the risk! Well… it wasn’t that much of a deal as I did have a base recipe, the Portuguese classic “Yogurt Cake”. I substituted the yogurt for pumpkin puree and add it some spices. The result was a simple cake to be enjoyed with a cup of tea. For the sweet tooth serve with some cream cheese frosting!

Spiced Pumpkin Cake

3 eggs
1 ¼ cups of sugar
½ cup of vegetable oil
½ cup of pumpkin puree (just cooked and pureed pumpkin)
1 ½ cups of flour
2 teaspoons of baking powder
1 teaspoon of cinnamon
1/2 teaspoon of ground ginger
¼ teaspoon of nutmeg
¼ teaspoon of allspice
¼ teaspoon of gound cloves
1/8 teaspoon of salt

Preheat oven to 180 degrees celsious (350 degrees Fahrenheit). Butter a cake pan and dust with flour, tap out excess.
In a bowl whisk flour, baking powder, spices and salt. Set aside.
Separate the egg yolks from the egg whites.
Beat the egg yolks with the sugar. Add the vegetable oil. Alternately add flour mixture and pumpkin puree.
Beat the egg whites and gently fold in the batter.
Bake the cake for about 45 minutes.

Cream Cheese Frosting
(in http://www.momswhothink.com/) - half a recipe will be enough

8 oz cream cheese
1/2 cup butter
1 teaspoon vanilla
3 cups confectioner's sugar
1 tablespoon milk

To make frosting, mix all ingredients until smooth.

Pudim de Iogurte

Sirva fresco.
