Lasanha de Beringela / Eggplant Lasagna

A sugestão de hoje é uma Lasanha um pouco menos pecaminosa, mas que não perde no sabor nem nos priva daquela sensação final de satisfação!

Lasanha de Beringela
 
2 beringelas pequenas cortadas longitudalmente em fatias de cerca de 3mm
1 cebola picada
250 gr de tofu esmagado com as mãos
1 lata pequena (aproximadamente 400gr) de tomate picado
300 gr de cogumelos frescos laminados
10 Azeitonas verdes descaroçadas
250gr de queijo ricotta
2 gemas
400 gr de espinafres congelados descongelados
100 gr de queijo ralado (pode ser mozarela, parmesão ou gruyère)
Sal e pimenta


Numa frigideira aqueça cerca de 2 colheres de sopa de azeite e aloure a cebola, junte o tofu, o tomate e os cogumelos. Tempere a gosto com sal e pimenta. Deixe cozinhar até os cogumelos estarem tenros. Adicione as azeitonas e reserve.

Numa tigela misture a Ricotta, as gemas e os espinafres. Tempere com sal e pimenta.

Pré-aqueça o forno a 180.º C.º.
Num pirex (eu utilizei um quadrado de 25 cm) deite metade do preparado com tomate. Por cima disponha as fatias de beringela para cobrir o molho de tomate numa única camada. Por cima das beringelas deite o creme de Ricotta e espinafres. Faça uma nova camada com as beringelas e termine com o molho de tomate. Cubra com o queijo. Tape o pirex com papel de alumínio e leve ao forno durante cerca de 30 a 40 minutos. Destape e deixe gratinar mais 15 minutos, até as beringelas estarem tenras e o queijo dourado.

 
 


Today’s recipe is a lighter Lasagna, but that still has all the flavor!

Eggplant Lasagna

2 small eggplants cut into long lengthwise slices (about 3 mm thick)
1 chopped onion
250gr of tofu (hand broken not chopped)
1 small can (approx. 400gr) of chopped tomatoes
300 gr sliced ​​mushrooms
10 green olives pitted
250 gr of ricotta cheese
2 egg yolks
400 gr of frozen spinach thawed
100 gr of grated cheese (it can either mozzarella, parmesan or gruyère)
Salt and pepper

In a skillet heat 2 tablespoons of olive oil, add the onion and sauté until tender. Add in the tofu, the tomatoes and the mushrooms. Season to taste with salt and pepper. Bring up to a simmer until the mushrooms are cooked. Add the green olives and reserve.

In a bowl mix the ricotta cheese, the egg yolks and the spinach. Season to taste with salt and pepper.

Pre-heat the oven to 375.º F.
Ladle about 1/2 of the tomato sauce into the bottom of a pyrex (I used a 25 cm square one). Lay down enough eggplant slices to cover the bottom in a single layer. Top with the ricotta mixture and repeat another layer of eggplant. End with the tomato sauce. Sprinkle the grated cheese over the top of the dish and cover with foil.

Bake the lasagna for 30 to 40 minutes with the foil on, then remove it and continue baking for another 15 minutes until the eggplant is tender and the cheese is browned.

Scones de Chocolate / Chocolate Scones


Não há lanche mais clássico do que tomar uma chávena de chá preto com uns scones acompanhados com manteiga e compota. No entanto, há dias em que uns simples scones sabem a pouco. Enquanto procurava nos meus livros de cozinha alguma coisa diferente encontrei esta receita de scones da Martha Stewart que tinha tudo o que eu precisava… chocolate!

Scones de Chocolate

2 ¼ chávenas de farinha de trigo sem fermento
3 colheres de sopa de cacau
½ chávena e 2 colheres de sopa de açúcar
1 ½ colher de chá de fermento Royal
½ colher de chá de bicarbonato de sódio
¼ colher de chá de sal
150 gr de manteiga fria, cortada em pequenos cubos
140 gr de chocolate de culinária cortado em pequenos pedaços
1 ovo (mais uma gema para pincelar)
½ chávena e 2 colheres de sopa de natas
Açúcar para polvilhar (opcional)
 
Junte numa tigela a farinha, o cacau, o açúcar, o fermento, o bicarbonato de sódio e o sal. Adicione a manteiga e misture (com as mãos ou com a batedeira) até obter uma areia grossa. Junte o chocolate.

Numa pequena  tigela junte as natas e o ovo. Incorpore esta mistura à farinha com a manteiga, mexendo apenas até formar uma massa.

Deite a massa numa superfície ligeiramente enfarinhada, e forme um rectângulo de 45 cm por 7,3 cm com 2,5, de altura (eu fiz um quadrado de 25 cm).

Com uma faca corte quadrados de aproximadamente 7,5 cm. Coloque os scones, a 2cm de distância uns dos outros, num tabuleiro forrado com papel vegetal e leve ao frigorífico até a massa ficar bem firme (poderá também congelar a massa durante 3 semanas).

Pré-aqueça o forno a 180.º C.º. Numa chávena bata ligeiramente a gema com a remanescente colher de natas; Pincele os scones e polvilhe generosamente com açúcar (eu omiti esta parte).
 
Leve ao forno até a cobertura de açúcar estar dourada, ou até testados com um palito este saia limpo, cerca de 25 a 30 minutos. Tire do forno e deixe arrefecer um pouco. Os scones são melhores no próprio dia, para consumir no dia seguinte sugiro aquecer uns segundos no micro-ondas.




Nothing is more five o’clock tea appropriated than a hot cup of English black tea and some freshly baked scones served with some butter and jam. However, some days the old plain scones just aren’t enough. While searching for something different I found these Martha Stewart Scones that had everything I needed… chocolate!

Chocolate Scones
(in Baking Handbook by Martha Stewart)

2 ¼ cups all purpose flour, plus more for dusting
3 tablespoons cocoa powder
½ cup plus 2 tablespoons granulated sugar
1 ½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 1/4 sticks (150 gr butter), cold, cut into small pieces
1 cup (140 gr) of semisweet chocolate chopped into small pieces
1 whole egg, plus a egg yolk
½ cup plus 2 tablespoons heavy cream
Sanding sugar, for sprinkling (optional)

In a large bowl whisk together the flour, cocoa, sugar, baking powder, baking soda, and salt. Add the butter (with you hands or with a food mixer), mix until the mixture resembles coarse crumbs. Fold in the chocolate.

Whisk together the egg and ½ cup plus 1 tablespoon cream. Add egg mixture to the flour mixture, until the dough just comes to together.

Turn the dough onto a lightly floured work surface, and gently pat into a 18-by-3-inch rectangle about 1 inch thick (I made a 10 inches square).

Using a knife cut the dough into 3 inches squares. Place the square (about 2 inches apart) in a lined baking sheet. Cover with plastic wrap and freeze the unbaked scones until the dough is very firm (you can also freeze the scones up to 3 weeks).

Preheat the oven to 375.ºF.º. In small bowl, lightly beat the egg yolks with the remaining tablespoon of heavy cream; brush the top of the scones and sprinkle generously with sanding sugar (I omitted this step).

Bake until the sugar on top of the scones turns golden all over, or a cake tester inserted in the center of a scone comes out clean, 25 to 30 minutes. Transfer to a wire rack to cool. They are best eaten the day they are baked, however in the day atfer if you heat them a few seconds on the microwave they will be as good.

Batido de Piña Colada / Piña Colada Smoothie

Batido de Piña Colada
 
Por muito que cheire e escolha às vezes lá compro um ananás que, apesar de aparentemente promissor, se revela demasiado ácido para comer simples.
 
O que fazer com ele então? Que tal um Batido de Piña Colada! Faz-se num ápice e traz um toque tropical ao nosso Outono frio e chuvoso.
 
Misture no copo liquidificador 1 iogurte natural, 100 ml de leite de coco e 1 chávena de ananás cortado em pedaços (pode adicionar mais a gosto) até obter uma bebida homogénea. Prove e adoce a gosto (eu utilizei um pouco de Néctar de Agave). Se tiver à disposição pode também adicionar umas folhas de hortelã.
  
Piña Colada Smoothie
 
Bought a pineapple that revealed to be unpleasantly acid? Why not transform it into a Piña Colada Smoothie? It takes like 30 seconds to prepare and brings a tropical flair to a cold and rainy day!
 
Place one natural yogurt, 100 ml of coconut milk and a 1 cup of pineapple (or more if you like) in a blender. Blend until smooth. Taste and sweeten to taste (I used some Agave Syrup). If available a few mint leaves can be added.

Bolo de Abóbora e Especiarias / Spiced Pumpkin Cake

Sempre temi inventar as minhas próprias receitas – doces ou salgadas -, ainda que facilmente aldrabasse todas as receitas que seguia. Desta vez resolvi arriscar a experiência e fazer uma alteração mais relevante. Peguei na clássica receita de bolo de iogurte e substitui o iogurte por puré de abóbora. Acrescentei também várias especiarias. O resultado foi um bolo simples, bom para tomar ao lanche acompanhado de uma chávena de chá. Para os mais gulosos sugiro uma cobertura de queijo Philadelphia que combina na perfeição.
 
Bolo de Abóbora e Especiarias
 
3 ovos
1 ¼ chávena de açúcar
½ chávena de óleo
½ chávena de puré de abóbora (nada mais é que abóbora cozida e triturada)
1 1/2 chávena de farinha sem fermento
2 colheres de chá de fermento Royal
1 colher de chá de canela
½ colher de chá de gengibre em pó
¼ colher de chá de noz moscada
¼ colher de chá de pimenta da Jamaica (opcional)
¼ colher de chá de cravinho moído
1/8 de colher de chá de sal
 
Ligue o forno a 180.ºC.º. Unte com manteiga e polvilhe com farinha uma forma de bolo.
Numa tigela junte a farinha com as especiarias, o sal e o fermento e reserve.
Bata bem o açúcar com as gemas e junte o óleo. Adicione alternadamente a farinha com o puré de abóbora. Finalmente bata as claras em castelo e incorpore na massa.
Vai ao forno durante cerca de 45 min.
 
 
Creme de Philadelphia

1 embalagem de queijo Philadelphia
115 gr de manteiga (à temperatura ambiente)
1 colher de chá de extracto de baunilha
3 chávenas de açúcar em pó (icing sugar)
1 colher de sopa de leite
 
 
Bata todos os ingredientes até obter um creme homogéneo.




Until yesterday I had never attempted to create my own recipe – savory or sweet. Although I always twist, one way or another, the ones I supposedly follow, creating one was a feared challenge. Only until yesterday when I just took the risk! Well… it wasn’t that much of a deal as I did have a base recipe, the Portuguese classic “Yogurt Cake”. I substituted the yogurt for pumpkin puree and add it some spices. The result was a simple cake to be enjoyed with a cup of tea. For the sweet tooth serve with some cream cheese frosting!
 
Spiced Pumpkin Cake
 
3 eggs
1 ¼ cups of sugar
½ cup of vegetable oil
½ cup of pumpkin puree (just cooked and pureed pumpkin)
1 ½ cups of flour
2 teaspoons of baking powder
1 teaspoon of cinnamon
1/2 teaspoon of ground ginger
¼ teaspoon of nutmeg
¼ teaspoon of allspice
¼ teaspoon of gound cloves
1/8 teaspoon of salt
 
 
Preheat oven to 180 degrees celsious (350 degrees Fahrenheit). Butter a cake pan and dust with flour, tap out excess.
In a bowl whisk flour, baking powder, spices and salt. Set aside.
Separate the egg yolks from the egg whites.
Beat the egg yolks with the sugar. Add the vegetable oil. Alternately add flour mixture and pumpkin puree.
Beat the egg whites and gently fold in the batter.
Bake the cake for about 45 minutes.
 
 
Cream Cheese Frosting
(in http://www.momswhothink.com/) - half a recipe will be enough
 
8 oz cream cheese
1/2 cup butter
1 teaspoon vanilla
3 cups confectioner's sugar
1 tablespoon milk
 
 
To make frosting, mix all ingredients until smooth.
